Ingredients

75 g dark chocolate
100 g butter
70 g sugar
2 eggs
70 g flour
30 g almond flour
a pinch of salt
half a teaspoon of baking powder
500 g cherries (fresh or frozen)
50 g sugar
half a teaspoon of cinnamon
1 vanilla pod
1 tablespoon cornstarch (or potato starch)
150 g Mascarpone
200 ml heavy cream
40 g sugar

Preparation

Prepare the cake

Melt the butter and set aside to cool.
Beat the sugar and eggs together until smooth using a mixer.
Gradually add the melted butter, both types of flour, baking powder, and a pinch of salt while mixing on medium speed.
Melt the chocolate in a double boiler, and once cooled, add it to the other ingredients. Mix gently.
Line a springform pan with parchment paper, then transfer the batter into the pan.
Bake in a preheated oven at 170°C for about 40 minutes, or until a toothpick comes out clean.

Prepare the cherry jam

Pit the cherries and place them in a pot.
Add sugar, cinnamon, and the seeds from the vanilla pod, and cook over medium heat until the mixture begins to boil.
Dissolve the cornstarch in about 1/4 cup of water, then add it to the cherries. Stir well and set aside to cool.

Prepare the cream

Whip the heavy cream with sugar, then add the Mascarpone and mix gently until smooth.
Serve the dessert in glass containers, layering the crushed chocolate cake, cherry jam, and Mascarpone cream alternately.
