The chocolate-cherry layer cake is a delicious, layered dessert that combines the intense taste of chocolate and the tartness of cherries. The sweet and slightly sour combination is simply irresistible. Ideal for various occasions, especially sweet evenings with a cup of tea.

Ingredients

75 g dark chocolate
100 g butter
70 g sugar
2 eggs
70 g flour
30 g almond flour
a pinch of salt
1/2 teaspoon baking powder
500 g cherries (fresh or frozen)
50 g sugar
1/2 teaspoon cinnamon
1 vanilla pod
1 tablespoon cornstarch (or potato starch)
150 g Mascarpone
200 ml heavy cream
40 g sugar
Preparation
Prepare the Cake
Melt the butter and set aside to cool.
Beat the sugar and eggs together until smooth using a mixer.
Gradually add the melted butter while mixing on medium speed.
Add both types of flour and mix until combined.
Add the baking powder and a pinch of salt and mix.
Melt the chocolate in a double boiler and set aside to cool.
Add the cooled chocolate to the other ingredients and mix gently.
Line a springform pan with parchment paper.
Transfer the batter into the pan.
Bake in a preheated oven at 170°C for about 40 minutes, or until a toothpick comes out clean.
Prepare the Cherry Jam
Pit the cherries and place them in a pot.
Add sugar, cinnamon, and the seeds from the vanilla pod.
Cook over medium heat until the mixture begins to boil.
Dissolve the cornstarch in about 1/4 cup of water.
Add the cornstarch mixture to the cherries and stir well.
Set aside to cool.
Prepare the Cream
Whip the heavy cream with the sugar.
Add the Mascarpone and mix gently until smooth.
Serve the dessert in glass containers, layering the crushed chocolate cake, cherry jam, and Mascarpone cream alternately.
