This hearty salad is the perfect combination of ingredients – healthy broad beans, rich in protein, and bulgur, full of fiber.
A dish that will satisfy both vegetarians and food enthusiasts.
Ingredients

500 g of broad beans
1 cup of bulgur
4 tablespoons of mayonnaise
4 tablespoons of Greek yogurt
1 teaspoon of mustard
lemon juice
fresh parsley
dill
salt and pepper to taste
Preparation
Cook the broad beans in salted water until tender (about 10-15 minutes).
Drain, cool, and peel the broad beans.
Cook the bulgur al dente in a separate pot with two cups of water, following the package instructions.
Set the bulgur aside to cool completely.
Finely chop the dill and parsley.
In a large bowl, mix the cooled bulgur with the dill and parsley.
In a separate bowl, combine the mayonnaise and Greek yogurt.
Add the mustard, lemon juice, salt, and pepper to taste, then stir until the mixture forms a smooth dressing.
Place the broad beans at the bottom of a jar or salad bowl.
Add the bulgur on top.
Pour the dressing over and serve immediately or refrigerate before serving.
