Ingredients

200 g raw salmon
1 avocado
100 g Mascarpone cheese
100 g cream cheese (Philadelphia)
5 tablespoons cream
1 shallot
olive oil
1 tablespoon truffle oil (optional)
lemon juice
salt and pepper
a pinch of chives for garnish

Preparation

Chop the salmon and shallot into small pieces.
Season with salt, pepper, lemon juice, and olive oil.
If using truffle oil, add it and mix well.
Cut the avocado into cubes.
Drizzle with lemon juice to prevent browning.
Mix the Mascarpone cheese with the Philadelphia cheese and cream to make a smooth mixture.
Using a metal ring mold, layer on the plate: first the cheese mixture, then the avocado pieces, and top with the salmon tartare.
Garnish with a pinch of chopped chives.
