Beets are great in any form, and when combined with herring, we can create an unusual salad with an incredible taste and appearance.
Ingredients

1 jar of pickled herring fillets (400 ml)
2 medium beets
1 apple
1 small onion
2 tablespoons mayonnaise
2 tablespoons Greek yogurt
salt and pepper
lemon juice
fresh dill
Preparation
Wrap the beets in their skins with aluminum foil and place them in an oven preheated to 180°C.
Bake for about 40 minutes, until they become soft (alternatively, cook the beets in water, but roasted beets give the salad a better flavor).
After cooling, peel the beets and cut them into small cubes.
Cut the apple and onion into cubes.
In a separate bowl, mix the mayonnaise with the Greek yogurt and lemon juice.
Cut the herring into small strips and add them to the other ingredients.
Mix all the ingredients together.
Season with salt and pepper to taste.
Sprinkle with freshly chopped dill.
