Tasty, healthy, and hearty vegetarian patties made with zucchini and bulgur wheat, perfect as a side dish for a main course for 4 people.
Ingredients

1 medium zucchini
2 carrots
1 cup of bulgur wheat
2 shallots
2 eggs
breadcrumbs for coating
a handful of fresh dill
a handful of fresh parsley
salt and pepper to taste
a little olive oil for greasing the baking tray
Preparation

Grate the zucchini and carrots using a coarse grater, then squeeze out the excess water.2
Cook the bulgur wheat in a ratio of 1 cup of bulgur to 2 cups of water.3
Let the bulgur cool for about 30 minutes until it absorbs all the water.4
Finely chop the shallots, dill, and parsley.5
Combine the bulgur, grated vegetables, and herbs in a bowl.6
Add the eggs, season with salt and pepper, and mix well until you get a uniform mixture.7
Form patties and coat them in breadcrumbs.8
Place the patties on a baking tray greased with olive oil and bake in an oven preheated to 220°C (425°F) for about 30 minutes, drizzling with olive oil occasionally to ensure they brown evenly.9
