Ingredients

Sour Milk Rings

400 ml sour milk
250 ml heavy cream
6 tablespoons powdered sugar
3 heaping teaspoons powdered gelatin
50 ml water

Mango Rings

2 mangoes
2 tablespoons lemon juice
2 heaping teaspoons powdered gelatin
50 ml water

Preparation

Pour the sour milk into a mixer and blend lightly. Add powdered sugar, heavy cream, and blend again until smooth.
Soak the gelatin in cold water. Once it swells, slightly heat it in the microwave. Then, add it to the sour milk mixture and stir well.
Pour the mixture onto a metal tray and leave it in the refrigerator to set.
Peel the mangoes, remove the pit, and cut them into pieces. Blend them into a smooth mixture, then strain through a sieve.
Prepare the gelatin solution as you did in the previous step, then add it to the mango mixture. Mix well and pour onto a metal tray, leaving it in the refrigerator to set.
Once the sour milk and mango mixtures have set, cut them into rings and arrange them in alternating layers. Decorate the top with slightly sour fruits, such as red currants.
