Aromatic fried fish served with delicious tartar sauce and fresh parsley pesto.
Ingredients

2 fillets of white fish (e.g., cod, sea bass)
flour for dredging the fish
oil for frying
Pesto
fresh parsley
1 clove of garlic
olive oil
2 tablespoons of lemon juice
salt and pepper
Tartar Sauce
1 pickled cucumber
4-5 pickled mushrooms (or pickled button mushrooms)
1 tablespoon of capers
1 tablespoon of small pickled onions
2 tablespoons of mayonnaise
2 tablespoons of yogurt
1 teaspoon of mustard
sugar to taste
salt and pepper
Preparation
Prepare the tartar sauce: In a bowl, mix the mayonnaise, yogurt, and mustard.
Finely chop the cucumber, mushrooms, capers, and onions, then add them to the sauce.
Season the sauce with salt, pepper, and sugar.
Prepare the pesto: In a mortar, finely chop the parsley and garlic.
Add the olive oil, lemon juice, salt, and pepper.
Mix the pesto.
Salt the fish fillets, then dredge them in flour.
Heat the oil in a pan and fry the fish until golden brown on both sides.
Serve the fried fish topped with parsley pesto.
Serve the tartar sauce on the side.
